It’s National Gymnastics Day! I love coaching our Pre-Team, even when I’m at my most exhausted. They make me laugh and inspire me to work hard at honing in on skills that need development. We celebrated yesterday by playing around on our new Tumbl Trak!

Hiatus
Sorry I haven’t posted in awhile. I have something major going on and once it blows over, I’ll come back, I promise.
Vegan Brownies
I made Gluten Free Vegan Brownies today!
Ingredients
2 cups Trader Joe’s All-Purpose Gluten Free Flour
1 cup Simply Balanced Coconut Sugar
3/4 cup Unsweetened Cocoa
1 tsp Baking Powder
1 tsp Salt
1 tsp Organic Vanilla Extract
1 cup Unsweetened Applesauce
1 cup water
1 cup Extra Virgin Coconut Oil
Steps
Preheat oven to 350 degrees.
Mix dry ingredients (flour, coconut sugar, cocoa, baking powder, salt) until fully incorporated.
Add in wet ingredients and mix until smooth.
Grease square baking pan and pour in mixture. Top with mini Enjoy Life Dairy Free Chocolate Chips.
Bake for 20-25 minutes until a toothpick comes out dry.
For accurate calorie count, cut into 20 even squares.
I like to individually package for easy portion control and to seal in moisture!

A clean apartment!
Cleaned the entire apartment, wrapped gifts for my 11 year old buddy’s birthday tomorrow and devoured a delicious roasted veggie dinner. Relaxing now until the boyfriend gets home.
Dust really bothers my throat and nose… Had to blow my nose three times while cleaning and now coughing. Ugh.
